AFAIK EC is always greyed out in full Manual mode because by very definition of Manual you set the EC by changing your exposure settings and watching where the exposure pointer lands on the -3 to +3 scale. I am happy to be corrected, but as far as I can tell with my 6D ii, the EC option disappears when moving from Av to M - only the AEB remains. NUY7MXn.
